    Heat oil in a large pot over medium-high heat. Add onion and beef; cook for 7–8 minutes, breaking up the meat, until browned and the beef reaches 160°F. Spoon off excess fat.

    Stir in garlic, tomato paste, and oregano. Cook for 1 minute, stirring so the paste does not stick.

    Add tomatoes and broth. Bring to a boil, add broken noodles, and simmer for 10–14 minutes, stirring often, until the noodles are tender.

    Season with salt. Divide into bowls and top each with a spoonful of ricotta. Add a little hot water if the soup thickens before serving.

A few things that help

Stir the bottom of the pot regularly after adding noodles.

For meal prep, cook and store the noodles separately so they do not soak up the broth.

Use ground turkey instead of beef and cook it to 165°F.

Small pasta shapes can replace broken lasagna sheets; use the package time.
